We are 2 days away from our Salad to Sexy Challenge!!! If you haven't hit your local Farmers Market
or Grocery just yet, here are some Salad ideas and recipes!! This should get
you thru the first couple of days!
Salads
1. Baby Spinach, green peppers, red peppers and fresh
mushrooms
2. Cucumber Salad: Sliced Cucumbers, cherry tomatoes halves,
chick peas, onions, vinegar, black pepper and a little EVOO
3. Romaine Lettuce, tomato, sliced carrot, grilled chicken,
fresh mushroom
4. Lettuce mix, dried cranberries, walnuts, cucumber.
*you may add avocado and feta cheese in moderation.
Breakfast
1. Blue Berries, strawberries, little vanilla yogurt, honey
roasted peanuts
2. Pineapples, cantaloupe, honeydew melon
3. Kiwi, mandarin oranges, red grapes, strawberries
4. Apples, blueberries, strawberries, bananas

2 -3 bunches coarsely chopped kale, ribs removed, chopped
1 tbsp Tony’s Cajun Seasoning
1/4 cup Nutritional Yeast
1/3 cup Red onion
1 tbsp Red pepper flakes
1/2 cup Sundried tomatoes, chopped
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground black pepper
Squeeze a wedge of lemon or lime over the salad
Toss & Enjoy
you can add shredded carrots and cut cucumbers to give it some color and texture
